Mixologist Tommy Klus combines two types of brandy for this drink: the South American grape-based pisco and Clear Creek plum brandy, a domestic brandy made with Oregon blue plums.

1 ounce plum brandy
1 ounce pisco, preferably Chilean
3/4 ounce Cocchi Americano (fortified, slightly bitter aperitif wine)
In a mixing glass, combine the plum brandy, pisco, Cocchi Americano and Chartreuse; fill with ice and stir well, then strain into a chilled coupe. Pinch the lemon twist over the drink and discard. Garnish with the thyme sprig.
