Although Joaquín Simó's drink is light and lemony, dry amontillado sherry (made in Jerez,Spain) gives it flavors and aromas of toasted almonds and dried fruit.
- Ice
- 1 1/2 ounces amontillado sherry
- 1/2 ounce Jamaican rum
- 1/4 ounce apricot liqueur
- 3/4 ounce fresh lemon juice
- 1/2 ounce cane syrup or Rich Simple Syrup
- Dash of Angostura bitters
- Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into a chilled coupe.
