Although Joaquín Simó's drink is light and lemony, dry amontillado sherry (made in Jerez,Spain) gives it flavors and aromas of toasted almonds and dried fruit.

  1. Ice
  2. 1 1/2 ounces amontillado sherry
  3. 1/2 ounce Jamaican rum
  4. 1/4 ounce apricot liqueur
  5. 3/4 ounce fresh lemon juice
  6. 1/2 ounce cane syrup or Rich Simple Syrup
  7. Dash of Angostura bitters
  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into a chilled coupe.
