Erik Adkins codesigned the bar list at Flora, a new cocktail-minded spot, where he emphasizes regional spirits and clever combinations like the maple syrup and rye in his Filibuster. He's also bar manager of San Francisco's ultrapopular Vietnamese restaurant Slanted Door, where he's so committed to using the best ingredients that he makes his own mixers—including eight different bitters. Here, he employs one store-bought shortcut—a dash of Angostura bitters.
