Fennel, Mushroom and Arugula Salad with Seared Scallops
This embellished version of a classic is from Christian "Goose" Sorensen, executive chef and co-owner of Starfish. Sautéed wild mushrooms replace the usual fresh white mushrooms, and sea scallops transform the dish into a substantial main course. If fresh chanterelles are hard to find, quartered shiitake caps make a fine substitute.
