Fatty Sling

Cocktail expert David Wondrich conceived the Fatty Sling as a nod to Donn Beach, the famous owner of the tiki-themed restaurant Don the Beachcomber. Beach, Wondrich says, "liked combining dashes of Pernod and Angostura bitters to give his concoctions a je ne sais quoi."
- Ice
- 1 1/2 ounces overproof white rum
- 2 ounces pineapple juice
- 1/4 teaspoon Pernod
- 2 dashes of Angostura bitters
- 2 ounces chilled ginger ale
- 1 pineapple wedge
- 1 maraschino cherry
- 1 cocktail umbrella (optional)
- Fill a cocktail shaker with ice. Add the rum, pineapple juice, Pernod and Angostura bitters and shake well. Strain into an ice-filled collins glass and stir in the chilled ginger ale. Garnish with the pineapple wedge, maraschino cherry and cocktail umbrella.
