En fuego (on fire) refers to the smoky quality of the Laphroaig single-malt whisky that Bezuidenhout uses in this margarita. "I would enjoy the En Fuego after dinner," he says. "Maybe with a cigar."
Glassware Guide Terrific Margaritas
1 3/4 ounces añejo tequila
1 ounce fresh lime juice
3/4 ounce Agave nectar
1/4 ounce single-malt Scotch
1 lime wheel, for garnish
How to Make It
Fill a cocktail shaker with ice. Add the tequila, lime juice and Agave nectar and shake well. Strain into an ice-filled rocks glass, top with the Scotch and garnish with the lime wheel.
