We love this recipe and have taken it on numerous occasions to picnics and outdoor concerts. I have used large round loaves, cut a circle out of the top, taken out some of the dough, and then layered the olive salad, meats, etc as described in the recipe. Replace the top and wrap in aluminum foil and refrigerate. (I also weight it down). Before serving, I slice it like a cake.

Emeril may have come from where I now live, New England - but this reminds me of the Central Grocery in my old home town - kudos to him!
