Jean-Georges Vongerichten transforms Gewürztraminer, a fruity white wine, into a light syrup. After swirling it with extra-virgin olive oil, basil and bacon, he drizzles the dressing over eggplant ravioli. It would also be superb on a green salad.

Pairing Suggestion

Alsace Gewürztraminer, a spicy, lychee-scented grape variety, helps define the sauce for these delicate ravioli. Two good Alsace Gewürztraminers to seek out are the floral 2005 Domaine Pierre Sparr and the gingery 2005 Albert Mann.

Although it says serves 6, you only transfer ravioli into 4 shallow bowls. Either 2 people go hungry, or there's a misprint.
