Eggplant, Pesto, and Goat-Cheese Pizza

Unless they're linebackers, this pizza should feed 4 people, not 2. Great combination of flavors, but a bit heavy. Also, be careful when cooking the eggplant that it doesn't absorb too much oil. Next time I'll only use 1 pound of eggplant and will smoke or grill it instead of frying in oil.
