Go back to recipeI made this to use up the eggplants our garden recently produced and now I want to host a dinner party just to share the love of this FABULOUS dish. All I can say is YUM! Great flavor, great textures w/ the cheesy goodness, eggplant and crisp topping. Everyone had seconds.

Used fresh eggplant from farmers market & panko breadcrumbs with pecans for the topping. This came out deliscious, of course always better the next day.

Crispy cheesy topping is delicious & I crinkle cut the eggplant to help gather the sauce. Going to make pannini sandwich out of the leftovers tonight!

This recipe was time consuming, but it did not take three hours. It was easy to split the recipe in half for my small family. If you love cheese, you'll love this recipe!
