Dutch Clover

Inspired by one of her favorite Bee's Knees variations--the Gold Rush, made with bourbon instead of gin--Lynnette Marrero decided to come up with her own version using Dutch Genever, which has a malty, whiskey-like quality. She adds Aquavit, too, because its caraway flavor goes so well with the Genever.

How to Make Brown Sugar


  • Ice
  • 1 1/2 ounces genever, preferably Bols
  • 1/2 ounce aquavit
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce honey syrup (1 tablepoon honey mixed with 1/2 tablepoon warm water)
  • 1 lemon twist, for garnish

How to make this recipe

  1. Fill a cocktail shaker with ice. Add the genever, aquavit, lemon juice and honey syrup and shake well. Strain into a chilled coupe and garnish with the lemon twist.
