Don Gorgon

When mixologist Richard Boccato received a bottle of aged Cabana Cachaça to experiment with, he fell in love with "its almost Cognac-like characteristics." He combined it with Aperol, a bitter orange Italian liqueur, and came up with this great cool-weather cocktail.
- Ice
- 1 1/2 ounces aged Cachaça
- 1/2 ounce Aperol
- 1 ounce fresh lime juice
- 1/2 ounce Rich Simple Syrup
- 1 ounce chilled club soda
- 1 cinnamon stick and 1 lime wedge, for garnish
- Fill a cocktail shaker with ice. Add the cachaça, Aperol, lime juice and Rich Simple Syrup; shake well. Strain into an ice-filled collins glass, stir in the club soda and garnish with the cinnamon and lime.
