Cucumber Mint Creole

Pegu Club co-owner Audrey Saunders used the classic Creole Cocktail—gin, lemon juice and sherry—as the basis for this drink.
- 2 mint sprigs
- 4 unpeeled cucumber wheels
- 3/4 ounce fresh lemon juice
- 1/2 ounce Simple Syrup
- Ice
- 1 1/2 ounces gin
- 1/2 ounce Dry Sack sherry
- 1/2 ounce cask-aged aquavit (caraway-flavored distilled spirit), preferably Linie
- In a pint glass, muddle the leaves from 1 of the mint sprigs with 3 of the cucumber wheels, the lemon juice and the Simple Syrup. Add ice and the gin, sherry and aquavit and stir well. Double strain the drink into a chilled coupe and garnish with the remaining mint sprig and cucumber wheel.
