Cucumber Ice Cubes

  1. 2 medium cucumbers—peeled, seeded and cut into chunks
  2. 1/4 cup spinach leaves, tightly packed
  3. One 4-inch tarragon sprig
  1. Combine all of the ingredients in a blender or food processor and puree. Press through a fine strainer to extract the liquid; freeze the extracted liquid in an ice cube tray.
