Cucumber Frappés with Blackberries

Recipe: Cucumber Frappés with Blackberries

Ingredients

  1. 1 pint blackberries
  2. 1/4 cup sugar
  3. 2 small seedless cucumbers—peeled, seeded and chopped
  4. 1 cup plain nonfat yogurt
  5. 1 cup ice cubes
  6. 2 tablespoons lime juice
  7. 6 mint leaves
  8. Pinch of salt
  1. In a bowl, lightly crush the blackberries with 1 tablespoon of the sugar. In a blender, combine the cucumbers, yogurt, ice, lime juice, mint leaves, salt and the remaining 3 tablespoons of sugar and blend. Spoon the berries and their juice into glasses. Pour the frappé on top and serve right away.
