“Lime, mint, peanuts, panko, noodles, shrimp—lots of textures collide in this dish, screaming for a white wine with some acidity,” says restaurateur Peter Kasperski. His preference is an Australian Riesling (such as the focused, citrusy 2007 Pewsey Vale Eden Valley and the intense 2007 Mesh) or an Austrian Grüner Veltliner (such as the crisp 2006 Nigl Kremser Freiheit).
