Creamy Carrot Soup with Scallions and Poppy Seeds

This has quickly become our family's favorite soup and we get rave reviews from guests. The scallions and poppy seeds are a must, as it could be a little bland without them. When garnished it has a beautiful presentation.

I think this soup is a good compliment to other foods that have stronger flavorings. I was unfortunately out of poppy seeds so I made the recipe without; it was a bit bland although a perfect starter that I followed with the Pasta with Sausage, Bail and Mustard recipe from this site. When I reheated the leftover soup for lunch the next day, I first sauteed some of the andouille sausage, added the rest of the soup, then added some microwaved fingerling potatoes for a quick lunch. These additions made the soup a perfect little meal in itself, with the flavoring from the sausage adding a nice kick and the fingerling potatoes adding an enjoyable sweetness.

It is good - but a bit bland. May benefit from addition of Indian spices, depending upon taste.
