Reviews for Creamy Broccoli Soup with Cheddar Crisps
Go back to recipethe original soup was pretty tasteless. however, by adding the following to the original recipe it ended up being fabulous.
1. onion salt, garlic powder, red hot flakes, 1 package of passover dried mashed potatoes (there are two to a box), one shake of nutmeg, 1/4 cup of creme fraiche, and 1/4 cup of grated cheddar into the soup. i put the soup in the serving bowls and wrap with plastic wrap. take out one hour b4 serving. nuke a few minutes (i did two bowls at a time for about 3mins) till hot, put a teaspoon dollap of creme fraiche and then top with crisps and italien parsley for garnish.
2. for the crisps, use grafton cheddar (white, from whole foods). do day ahead, then carefully wrap in paper towel to keep. careful cause they will break easily.

I hat to report that I have to agree with my normally-broccoli-loving daughter: "BLECH!" This was a terrible soup. I even tried to make it with a combination of chicken stock, milk and water to add some flavor and it did not help. Very disappointing. Would not recommend for any reason.

This is great because it's non-dairy based. It needed a bit more flavor so I added some white wine (chardonnay because it's what I had open), some (green) hot sauce and garlic salt. I also used 1/2 chicken broth, 1/2 water. Made for a great quick & easy soup.

I have not made this recipe yet because I think it is lacking an essential ingredient. Can someone help. There is no milk product in the list of ingredients. I have pureed vegetable based soups before and know you can create a creamy texture throup a pureeing process. However, the picture of this soup defintely shouts CREAM. Barbara Lynch if you could help that would be great
