This ingenious dish uses the liquid from simmered cranberries as a tart glaze for sweet potatoes, while the cooked berries make an attractive garnish. Because the potatoes are spread out in a single layer, the dish resembles an apple tart.

Cranberry-Glazed Sweet Potatoes

This dish became a new tradition after making it last year for Thanksgiving. The tartness of the berry glaze beautiful balances the rich sweetness of the potatoes. Well worth the effort! I have also substituted pomegranate syrup and fresh pomegranate seeds... delicious!

This is a great recipe, easy, delicious, attractive and a perfect holiday dish or - just a great sweet potato dish. If you run into it, make sure to add it to your favorites as it is virtually impossible to find it by an electronic search without the exact recipe name. (Doesn't come up under potatoes, sweet, or "cranberries.")
