Couscous with Scallions and Parsley

  1. 1 cup water
  2. 1 tablespoon unsalted butter
  3. 2 teaspoons kosher salt
  4. 1 cup couscous
  5. Thinly sliced scallions
  6. Coarsely chopped flat-leaf parsley
  1. In a medium saucepan, combine the water with the butter and salt and bring to a boil. Add the couscous, cover and remove from the heat. Let stand 5 minutes. Using a fork, fluff the couscous. Add the scallions and parsley and serve.
