Ingredients 1 cup water 1 tablespoon unsalted butter 2 teaspoons kosher salt 1 cup couscous Thinly sliced scallions Coarsely chopped flat-leaf parsley Instructions In a medium saucepan, combine the water with the butter and salt and bring to a boil. Add the couscous, cover and remove from the heat. Let stand 5 minutes. Using a fork, fluff the couscous. Add the scallions and parsley and serve.
