Recipe: Couscous with Scallions and Parsley

Ingredients
- 1 cup water
- 1 tablespoon unsalted butter
- 2 teaspoons kosher salt
- 1 cup couscous
- Thinly sliced scallions
- Coarsely chopped flat-leaf parsley
- In a medium saucepan, combine the water with the butter and salt and bring to a boil. Add the couscous, cover and remove from the heat. Let stand 5 minutes. Using a fork, fluff the couscous. Add the scallions and parsley and serve.
