Couscous with Cinnamon, Almonds and Golden Raisins

  1. 1/3 cup sliced almonds
  2. 1 cup water
  3. 1 tablespoon unsalted butter
  4. 2 teaspoons kosher salt
  5. 1/2 teaspoon cumin
  6. 1/8 teaspoon cinnamon
  7. 1 cup couscous
  8. 1/4 golden raisins
  9. Freshly ground pepper
  1. Preheat the oven to 350°. Spread the almonds in a pie plate and toast for about 6 minutes, until light golden and fragrant. In a medium saucepan, combine the water with the butter, salt, cumin and cinnamon and bring to a boil. Add the couscous, cover and remove from the heat. Let stand 5 minutes. Using a fork, fluff the couscous. Add the almonds and raisins, season with pepper and serve.
