Cold Peanut Noodles with Tofu and Red Peppers
this was really tasty. i used whole wheat noodles and added steamed broccoli and served it warm. filling and delicious, even my friend who isn't a huge peanut butter fan loved it. looking forward to eating the leftovers cold!

I've been trying to bring lunch to work more, and this dish is perfect—cheap, healthy, tasty. Blanched broccoli and carrots are a nice addition if you aren't a huge bell pepper person.
