Clermont Smash

Smashes are drinks traditionally made with a spirit and crushed ice, flavored with mint and dressed with any variety of seasonal fruit. Tony Abou-Ganim's variation is named after Clermont, Kentucky, where the Beam family distillery reopened after Prohibition ended in 1934.
Ingredients
- 10 to 12 mint leaves, plus 1 mint sprig
- 3/4 ounce Velvet Falernum (clove-spiced liqueur)
- Ice cubes, plus crushed ice
- 1 1/2 ounces bourbon
- 1 ounce fresh lemon juice
- 3 dashes of peach bitters
- 1 pineapple spear
Directions
- In a cocktail shaker, muddle the mint leaves with the Velvet Falernum. Add ice cubes and the bourbon, lemon juice and bitters and shake well. Strain into a rocks glass filled with crushed ice and stir until the outside of the glass begins to frost. Rub the rim of the glass with the pineapple spear, then garnish with the pineapple spear and mint sprig.
