- 1 cup packed cilantro leaves
- 1/2 cup packed mint leaves
- 1/2 small onion, minced
- 1/4 cup vegetable oil
- 2 tablespoons rice vinegar
- Salt and freshly ground pepper
- In a blender, combine the cilantro, mint, onion, oil and vinegar and puree until smooth. Season with salt and pepper.
