Chocolate-Caramel Sandwich Cookies
the caramel did not harden and the cookies are very hard and thin. wish i had read the reviews before attempting.

This is the most amazing chocolate cookie!! The cookie is crisp and the caramel divine!! Recommend following the recipe exactly and do not hurry the caramel. I actually scoop the caramel onto the cookie versus cutting it out. I also leave off the chocolate because it tends to overpower the caramel. I am contemplating dipping it slightly into a course salt??

I found this recipe to be ridiculously difficult to get to turn out. I've attempted it twice, and both times, the cookies ended up too hard (I have reduced the cooking time down to 13 minutes to no avail), and the caramel refused to harden. When cooking the caramel I use a candy thermometer to ensure that I reach 250 degrees, but I'm not sure what I'm doing wrong. I look at the picture and sigh, because it just looks so good.... For those of you who enjoyed this recipe, please share your tips for success!
