Chilled Peaches with Arborio Rice Pudding and Cinnamon Churros

This amazing dessert, with sweet and drippy peaches, creamy rice pudding and the crispiest churros ever, is a popular choice at Gabriel Bremer’s Salts. There, he puts the rice pudding into a whipped cream canister to make it into a foam; we’ve skipped that step here, but if you opt to do it, puree the rice pudding and, once it’s cooled, strain it and put into the canister to whip it.

This recipe is really 3 deserts in one. The 5 stars is for the rice pudding, which was incredible,  and tastes like you-know-what (I've made it twice). I added a stick of cinnamon to the milk and remove it after it's cooked. The peaches were delicious and refreshing, and not too sweet. The churros I didn't really care for--it's basically fried dough. Make sure to scale back on the salt and get the oil really hot or it won't come out correctly. You also only need 1/2 cup of sugar for the coating.
