Cacciatore (Italian for "hunter") is a classic dish typically made with tomatoes, onions, peppers and mushrooms. The mushrooms add a nice earthy flavor, but the recipe is just as good without them. Or, for a dinner subterfuge, soak some dried porcini and replace the water in the recipe with some of the soaking liquid. Don't tell your kids.
