Cheesy Winter Greens Casserole

This rich casserole is a great way to make leafy greens like chard and spinach appealing to even the pickiest of eaters. Gruyere adds a great nutty flavor to the dish that's perfect for the fall or winter.

Ingredients

  • 2 tablespoons butter
  • 1 large sweet onion, diced
  • 4 cups thinly sliced chard leaves, thick stems removed
  • 20 ounces spinach leaves
  • 2 cups milk
  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground nutmeg
  • Sea salt
  • Pepper
  • 1 cup coarsely grated Gruyère
  • 1/2 cup bread crumbs

How to make this recipe

  1. Preheat the oven to 400°.
  2. In a large nonstick skillet, heat the butter. Sauté the onion over medium-high heat until soft, about 5 minutes. Add the chard and cook until wilted, about 3 minutes. Add the spinach and cook 2 minutes more. In a small bowl, whisk together the milk and cornstarch. Add the pan and simmer until slightly thickened, about 5 minutes. Season with the nutmeg, 1 teaspoon salt and pepper.
  3. Transfer the greens to a 3-quart ceramic baking dish and sprinkle the cheese over the top, followed by the breadcrumbs. Bake for 15 minutes, until heated through and the top is lightly golden brown.
