Carrot-Ginger Dressing

  1. 1/4 cup minced shallot
  2. 1/4 cup finely shredded carrot
  3. 2 tablespoons fresh lemon juice
  4. 2 tablespoons mirin
  5. 2 tablespoons rice vinegar
  6. 1 tablespoon soy sauce
  7. 2 teaspoons grated peeled fresh ginger
  8. 1 teaspoon Asian sesame oil
  1. In a blender, puree all of the ingredients until smooth.
