Scotch-lover Father Cameron Ayers (a close friend of Duggan McDonnell's) challenged the mixologist to come up with a Scotch-based cocktail that was bold and refreshing but stayed true to the whisky's roots.

- 12 ounces blended Scotch
- 4 ounces dry white wine, such as Sauvignon Blanc
- 4 ounces fresh lemon juice
- 4 ounces Simple Syrup
- Ice
- 8 ounces chilled ginger beer or ginger ale
- Angostura bitters, for garnish
Directions
- In a large resealable container, combine the first four ingredients; refrigerate for at least 1 hour. Cover and shake, then pour into an ice-filled pitcher. Strain into ice-filled collins glasses, stir in the ginger beer and garnish with dashes of bitters.
