Fruity aguas frescas, or "fresh waters," are popular all over Mexico. When head bartender Greg Hoitsma poured the purple-red Hibiscus Agua Fresca into this drink, he instantly came up with its name, which means "stained Caipirinha."

Ingredients

  1. 1/2 lime, cut into 6 pieces
  2. 3/4 ounce Simple Syrup
  3. 1 cup ice
  4. 1 1/2 ounces cachaça (potent Brazilian sugarcane spirit)
  5. 1/2 ounce Hibiscus Agua Fresca
  1. In a cocktail shaker, muddle the lime pieces with the Simple Syrup. Add the ice and cachaça and shake well. Pour into a rocks glass and pour the Hibiscus Agua Fresca over a bar spoon on top.
