A riff on the classic peach-and-Champagne Bellini, the slightly sweet Bubbletini complements the spicy food at this pan-Asian restaurant named for Tokyo's trendy nightclub district.

  1. Ice
  2. 1 1/2 ounces vodka
  3. 1 1/2 teaspoons peach schnapps
  4. 1/2 teaspoon Chambord
  5. 1 1/2 teaspoons fresh lemon juice
  6. 2 to 3 ounces chilled Champagne
  7. 1 lemon twist
  1. Fill a cocktail shaker with ice. Add the vodka, schnapps, Chambord and lemon juice and shake well. Strain into a chilled martini glass and top with the Champagne. Garnish with the lemon twist.
