Braised Lentils with Kielbasa

  1. 1 tablespoon extra-virgin olive oil
  2. 1/4 pound kielbasa, finely diced
  3. 1 small onion, minced
  4. 1 carrot, minced
  5. 1 garlic clove, minced
  6. 1/2 pound brown lentils
  7. 3 cups water
  8. 1 bay leaf
  9. Salt and freshly ground pepper
  1. In a large saucepan, heat the oil. Add the kielbasa, onion, carrot and garlic and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the lentils, water and bay leaf, season with salt and pepper and bring to a boil. Cover partially and simmer over very low heat until the lentils are tender, about 20 minutes. Discard the bay leaf. Season the lentils with salt and pepper and serve.
