"Often it's difficult to construct nonalcoholic drinks without making them fruity sugar bombs," says Jennifer Colliau. She admires this drink, created by cocktail purist Thad Vogler, because it's a straightforward sour that uses tea instead of a spirit as its base. (A huge tea fan, Vogler drinks several cups a day.)

  1. 2 ounces chilled brewed black tea
  2. 3/4 ounce fresh lemon juice
  3. 1/2 ounce grenadine, preferably homemade
  4. 1 large egg white
  5. 1/4 ounce Simple Syrup
  6. Ice
  1. In a cocktail shaker, combine all of the ingredients except ice and shake well. Add ice and shake again. Pour through a fine strainer into a chilled coupe.
