Black Tea Sour

"Often it's difficult to construct nonalcoholic drinks without making them fruity sugar bombs," says Jennifer Colliau. She admires this drink, created by cocktail purist Thad Vogler, because it's a straightforward sour that uses tea instead of a spirit as its base. (A huge tea fan, Vogler drinks several cups a day.)
- 2 ounces chilled brewed black tea
- 3/4 ounce fresh lemon juice
- 1/2 ounce grenadine, preferably homemade
- 1 large egg white
- 1/4 ounce Simple Syrup
- Ice
- In a cocktail shaker, combine all of the ingredients except ice and shake well. Add ice and shake again. Pour through a fine strainer into a chilled coupe.
