Mixologist Jacques Bezuidenhout created this cocktail to complement the Mediterranean cooking at this restaurant next to the Hotel Palomar.
1 1/2 ounces Viognier or other aromatic white wine
1/2 ounce chilled apple juice
3/4 ounce fresh lime juice
1 ounce Simple Syrup
1 lemon twist
Directions
Fill a cocktail shaker with ice. Add all of the remaining ingredients except the twist. Shake well and strain into an ice-filled highball glass. Garnish with the twist.
