The pink-hued Bellini was created in the late 1940s by Giuseppe Cipriani at Harry's Bar in Venice. It was named after 15th-century Italian artist Giovanni Bellini, whose signature works had a pink glow.

Ingredients

  • Ingredients
    1. 3 thyme sprigs
    2. 1/4 ounce Simple Syrup
    3. Ice
    4. 1 ounce peach puree or nectar
    5. Dash of peach bitters
    6. 4 ounces chilled Prosecco

Directions

  1. In a pint glass, muddle 2 thyme sprigs with the Simple Syrup. Add all of the remaining ingredients except the last thyme sprig. Stir well and strain into a chilled flute. Garnish with the remaining thyme sprig.
