Like many top cocktail bars, Eastern Standard makes its own syrups, including the grenadine that gives Belle de Jour its blushing color and hint of Bittersweet pomegranate.

Ingredients

1. Ice
2. 1/2 ounce Bénédictine (brandy-based herbal liqueur)
3. 1/2 ounce Cognac
4. 1/2 ounce grenadine, preferably homemade
5. 1/2 ounce fresh lemon juice
6. 3 ounces chilled Champagne
7. 1 lemon twist

Directions

1. Fill a cocktail shaker with ice. Add the Bénédictine, Cognac, grenadine and lemon juice and shake well. Strain into a chilled flute and top with the Champagne. Garnish with the lemon twist.
