Like many top cocktail bars, Eastern Standard makes its own syrups, including the grenadine that gives Belle de Jour its blushing color and hint of Bittersweet pomegranate.
Fill a cocktail shaker with ice. Add the Bénédictine, Cognac, grenadine and lemon juice and shake well. Strain into a chilled flute and top with the Champagne. Garnish with the lemon twist.
