Bajan Spice Syrup

  • SERVINGS: Makes about 10 ounces

Use this syrup to make Père Labat's Punch.

  1. 1 tablespoon whole cloves
  2. 1 cinnamon stick, crushed
  3. 1 tablespoon cracked or very coarsely grated nutmeg
  4. 1 cup water
  5. 1 cup sugar
  1. In a small saucepan, combine cloves, cinnamon and nutmeg. Add water and sugar and bring to a boil. Cook over low heat for 15 minutes. Strain the syrup into a heatproof jar and let cool, then cover and refrigerate for up to 1 month.
