For this spin on a gin cocktail made with lime juice, cucumber and mint, Jennifer Colliau uses juniper berries to approximate the flavor of the gin. The dried berries are available in the spice section of most supermarkets.

- 6 juniper berries
- Five 1/2-inch-thick cucumber slices, plus 1 cucumber slice for garnish
- 20 mint leaves, plus 1 mint sprig for garnish
- 1 ounce fresh lime juice
- 1 ounce Simple Syrup
- 3 ounces chilled club soda
- In a cocktail shaker, muddle the juniper with 5 cucumber slices. Add ice and the mint leaves, lime juice and Simple Syrup; shake well. Fine strain into an ice-filled collins glass. Stir in the soda and garnish with a cucumber slice and mint sprig.
