Jonny Raglin Absinthe
Jonny Raglin is always inventing brand-new drinks, which makes Absinthe’s “libations” list wonderfully unique. Like most Bay Area bartenders, he highlights West Coast spirits whenever possible. One favorite is Clear Creek Distillery’s kirsch, a cherry brandy that he uses in this dessert drink, an unlikely blend of maraschino liqueur, crème de cacao and cream.

Ingredients
- 1 lemon wedge
- Unsweetened cocoa powder
- Ice
- 1 ounce kirsch (cherry eau-de-vie)
- 1/2 ounce maraschino liqueur
- 1/4 ounce white crème de cacao
- 1/2 ounce heavy cream
- 1/4 ounce Simple Syrup
- 3 brandied cherries skewered on a pick
Directions
- Moisten half of the outer rim of a martini glass with the lemon wedge and coat lightly with cocoa powder. Fill a cocktail shaker with ice. Add the kirsch, maraschino liqueur, crème de cacao, heavy cream and Simple Syrup and shake well. Strain the drink into the prepared martini glass and garnish with the skewered brandied cherries.
