- 1 1/2 cups watermelon juice
- 1 teaspoon soy lecithin
- Sea urchin
- Spanish extra-virgin olive oil
- Juice of 1 lime
- Combine the watermelon juice with the lecithin. Mix with a hand blender, tilting the bowl to incorporate air. Put the sea urchin in shallow bowls. Dress with olive oil and lime juice and top with the watermelon mixture.
