Watermelon Air with Sea Urchin (Aire de Sandia con Erizos de Mar)

  1. 1 1/2 cups watermelon juice
  2. 1 teaspoon soy lecithin
  3. Sea urchin
  4. Spanish extra-virgin olive oil
  5. Juice of 1 lime
  1. Combine the watermelon juice with the lecithin. Mix with a hand blender, tilting the bowl to incorporate air. Put the sea urchin in shallow bowls. Dress with olive oil and lime juice and top with the watermelon mixture.
