  • 7.5 grams of algin (see Note)

How to make this recipe

  1. In a blender, combine the water and the algin. Blend until smooth. Refrigerate for 48 hours until the air that was whipped into the mixture dissipates and the algin rehydrates itself.


Algin is a purified carbohydrate extracted from brown algae and used as a stabilizer in food.
