This sauce is not cooked except on the pizza itself, as the desired flavor is fresh, not stewed.

  1. 1/3 cup extra-virgin olive oil
  2. 2 1/2 cups Pomi strained tomatoes, or whole canned tomatoes without added salt (such as San Marzano), partially puréed with their juices
  3. 1/4 teaspoon kosher salt
  1. Just before using, mix all the ingredients together.
