Fresh Tomato Sauce Otto-Style
- SERVINGS: MAKES ABOUT 3 CUPS
This sauce is not cooked except on the pizza itself, as the desired flavor is fresh, not stewed.
- 1/3 cup extra-virgin olive oil
- 2 1/2 cups Pomi strained tomatoes, or whole canned tomatoes without added salt (such as San Marzano), partially puréed with their juices
- 1/4 teaspoon kosher salt
- Just before using, mix all the ingredients together.
