  • VEGETARIAN
  1. 1/2 tablespoon coriander powder
  2. Salt and ground black pepper, to taste
  3. 1 Globe eggplant, or 4 Chinese eggplants
  4. 2 tablespoons peanut oil, divided
  5. 1 tablespoon butter
  6. 1 teaspoon minced jalapeño
  7. 1 tablespoon minced garlic
  8. 1 tablespoon minced ginger
  9. 1 tablespoon minced white onion
  10. 1/4 cup tomato concassee
  11. 1 teaspoon sugar
  12. 1/2 tablespoon cumin powder
  13. 1 tablespoon cilantro, chiffonade

  4. Taste and correct seasoning with salt and pepper. Turn off heat and stir in cilantro. Use as needed.
