Apricot Sour

The inventive cocktails at Central, Michel Richard's casual alternative to his flagship Citronelle, mirror the restaurant's updated American dishes, such as lobster burgers and crab cakes with leek tartar sauce.

  1. 1 1/2 ounces apricot brandy
  2. 1 ounce sweet vermouth
  3. 1 ounce fresh lemon juice
  4. 1 large egg
  5. 3 dashes of orange bitters
  6. Ice
  7. 1 brandied cherry
  8. 1 fresh apricot slice
  1. Put the brandy, vermouth, lemon juice, egg and bitters in a cocktail shaker and shake well for 10 seconds. Add ice and shake again. Strain into an ice-filled rocks glass. Garnish with the apricot slice and cherry, skewered on a pick together.
