Apricot and Stormy

Philip Duff particularly likes this fruity drink with spicy Caribbean, Indonesian and Indian foods like jerk chicken, beef rendang (beef cooked in coconut milk) and lamb tikka.

  1. Ice cubes, plus crushed ice
  2. 1 ounce vodka
  3. 1 ounce apricot liqueur
  4. 1 ounce apricot nectar or juice
  5. 1 ounce chilled ginger beer
  6. 1 lime wedge
  7. 1 dried apricot skewered on a pick, for garnish
  1. Fill a cocktail shaker with ice cubes. Add the vodka, apricot liqueur and apricot nectar and shake well. Strain into a crushed-ice-filled rocks glass, then top with the ginger beer. Squeeze the lime wedge over the drink and add it to the drink. Garnish with the skewered apricot.
