Eric Alperin experimented with grappa as a substitute for South American pisco while creating Italian-inspired drinks at L.A.'s Osteria Mozza.
- 1 1/2 ounces grappa
- 1/2 ounce apricot brandy
- 3/4 ounce fresh lemon juice
- 1/2 ounce Simple Syrup
- 1 large egg white
- Ice
- 4 drops of Angostura bitters
- In a cocktail shaker, combine the grappa, brandy, lemon juice, Simple Syrup and egg white and shake well. Add ice and shake again. Strain into a chilled coupe, dot with the bitters and draw a straw through the drops.
